RECIPES
Kristina’s parents’ turkey porridge recipe
Ingredients:
1 Whole turkey carcass, bones broken down into manageable sizes to fit into your slow cooker
½ to 1 cup aromatics and vegetables that were roasted with your turkey
½ cup turkey meat and skin
1 cup rice
¼ cup turkey drippings
Water
Directions:
Fill a slow cooker with turkey carcass, aromatics, vegetables, turkey meat and skin, rice, and turkey drippings.
Add water to just below the lip were the lid rests. (Please note that this is for a standard sized, round slow cooker. If your slow cooker is oblong, you might need to add a touch more rice if the amount of water seems like it would make for a very runny porridge. And apologies for the vagaries -- when I asked my parents what size their 1970s slow cooker is, they just said “standard size”, so…)
Cover and set to high. Let this go, untouched, for at least 7-8 hours. Resist the urge to remove the lid before then.
To plate, make sure you get the browned rice from the sides and bottom of the slow cooker, along with the porridge, turkey, and vegetables.
Top with anything and everything that strikes your fancy! Including but not limited to:
Scallion and/or other tender fresh herbs
Sesame oil
Chili oil
Chili crisp
Hot sauce
French fried onions
Grated cheese
XO sauce
Sesame seeds
Pork floss
Crumbled chicharrón
Toasted up bits of stuffing
More turkey
More turkey drippings
Crispy fried egg
Pesto
Lemon zest
Fried up sausage (Chinese, chorizo, ‘nduja, Italian, breakfast…)
